ORGANIC WINES
The GIASIRA winery is located in a corner of Sicily of rare beauty.
In 2004, Giovanni Boroli, a Piedmontese entrepreneur deeply in love with Sicily, together with his wife Isabella—Venetian, with a father from Syracuse—purchased the estate and began restoring the ancient baglio to transform it into their residence, immersed in the rural landscape of the Hyblaean region.
The winery takes its name from the Arabic word Gisira or Gesira, meaning “Island,” which was the name once given to the area where the estate is located, isolated by the deep erosive ravines (cave) that cross the Hyblaean plateau.
The GIASIRA estate extends across approximately 130 hectares at an altitude ranging from 180 to 250 meters above sea level, straddling the provinces of Syracuse and Ragusa. Framed by traditional dry-stone walls, the estate lies between the towns of Noto and Modica, both recognized by UNESCO as World Heritage Sites.
Within the estate, among the high rocky walls of Cava Paradiso, flows the Prainito stream, surrounded by thousands of centuries-old olive and carob trees, together with almond and citrus groves that characterize the agricultural production of this part of Sicily.
Giovanni Boroli immediately understood that these calcareous soils and the local climatic conditions provided the ideal foundations for producing high-quality grapes.
Thus, beginning in 2005, with the consultancy of winemaker Gianfranco Cordero, he decided to plant traditional local grape varieties such as Nero d’Avola and Moscato Bianco, alongside other native Sicilian varieties including Grillo, Catarratto, and Nerello Mascalese, as well as a small percentage of international grapes such as Merlot and Chardonnay.
The principles of sustainable agriculture and environmental respect form the foundation of the company philosophy and guide the entire production of GIASIRA organic wines, cultivated under certified organic farming practices.
Giovanni’s vision, combined with meticulous vineyard care, the use of beneficial insects for integrated pest management, and skilled work in the cellar, has resulted in a collection of organic wines that fully express integrity, elegance, and a deep love and respect for this unique corner of Sicily.
